Roasted Vegetables

Recipe from Sandy Olsen

3 medium onions, cut into wedges
6 small red potatoes, halved
2 medium sweet potatoes, peeled & cut into ¼-inch slices
2 tbls olive oil
1 tsp salt
½ tsp pepper

Preheat oven to 450 degrees.  Toss all ingredients together and place on an aluminum-foil-lined baking sheet.  Bake for 30 minutes.
