Poppy Seed Dressing for Fresh Fruit

Recipe from Gail Christians

1/2 cup sugar
1 tsp salt
1 tsp dry mustard
1/2 tsp grated lemon peel
3/4 cup salad oil
1/2 cup lemon juice
1 tbls poppy seeds

Combine ingredients except poppy seeds in a glass jar with lid.  Shake well and frequently.  Chill.  Add poppy seeds just before serving.  Serve over fresh fruit. 9

Watergate Salad

1 container Cool Whip
1 (4 oz) pkg pistachio pudding
1 (20 oz) can pineapple, crushed
1 cup chopped pecans
1 cup miniature marshmallows

Mix cool whip and pudding together.  Then drain a little juice from pineapple.  Add pineapple, pecans, and marshmallows to Cool Whip mixture.  Stir and refrigerate.

Sunshine Salad

1 (20 oz) can pineapple tidbits
1 (11 oz) can mandarin oranges
1 (3.4 oz) pkg instant lemon pudding
1 cup quartered strawberries
1 cup sliced ripe bananas

Drain pineapple and oranges, reserving liquids.  Prepare pudding, using liquid from the fruit in place of milk.  In a bowl, combine pineapple, oranges, and strawberries. Gently fold in pudding.  Chill for at least 2 hours.  Add bananas just before serving.

Yields: 8-10 servings

Rainbow Salad

3 oz black cherry Jell-O (water)
3 oz lime Jell-O (milk)
3 oz lemon Jell-O (water)
3 oz orange Jell-O (milk)
3 oz peach Jell-O (water)
3 oz strawberry Jell-O (milk)
1 large can evaporated milk

For water layer use 1 cup boiling water and ½ cup cold water.  For milk layer use 1 cup boiling water and ½ cup evaporated milk.  Let set-up between layers.

Orange Jell-O Salad

2 cups crushed pineapple
¾ cups sugar
1 (6 oz) pkg orange Jell-O
2 cups cold water
1 cup grated Longhorn cheese
1 cup whipped cream

Boil first three ingredients.  Add water and let partially set.  Add cheese and whipped cream.

Orange Fruit Salad

5 oranges, peeled & cut into tidbit size
1 can pineapple tidbits
1 can fruit cocktail or any can fruit
½ cup sugar
3 tbls cornstarch
3 tbls lemon juice
1 tbls butter
4 bananas, sliced

Put all fruit in bowl and add sugar.  Let stand overnight.  Drain off juice and put fruit in saucepan.  Add cornstarch and cook until thick.  Remove from heat.  Add lemon juice and butter.  Cool.  Add bananas to fruit mixture & chill.

Honey-Lime Fruit Toss

1 can pineapple chunks, drained & juice reserved
1 can mandarin oranges, drained
1-2 bananas, sliced
1 kiwi, peeled & sliced
1 quart strawberries, washed, hulled, & dried
2 apples, cored & cut up into bite-size pieces
1 tbls lime juice
1 tbls honey
Reserved pineapple juice

Combine fruit in large salad bowl.  Mix lime juice, honey, and reserved pineapple juice.  Pour over fruit.

Fruit Salad

2 apples, cored & cut-up into bite-size pieces
Bunch of grapes, washed & sliced in half
2 bananas, sliced
Miniature marshmallows
Miracle Whip
Milk

Mix fruit in medium sized salad bowl, reserving bananas until ready to serve.  Stir together miracle whip and milk.  Toss with fruit.  Add marshmallows and toss again.
