1 cup chopped onion
¼ cup margarine
2½ cups Bisquick
½ tsp dried basil
1 tbls dried parsley
½ tsp dried thyme
¼ cup milk
3 eggs
1½ cup shredded zucchini
1 cup shredded Cheddar cheese
¾ cup chopped almonds, toasted (optional)
Preheat oven to 400 degrees. Grease & flour 9-inch round pan. Cook onion in margarine until tender. Cool slightly. Mix together onion, Bisquick, parsley, basil, thyme, milk, and eggs; beat 1 minute. Stir in zucchini, cheese, and almonds (if using). Spread in pan. Bake 40 minutes or until toothpick inserted in middle comes out clean. Cool slightly and remove from pan.
